A research team from the University of Seville (US) and the University of Huelva (UHU) has developed an ‘intelligent’ system that identifies the way lambs have been fed from meat samples. According to the Discover Foundation, an organisation dependent on the Department of University, Research and Innovation, this alternative method to technical visits can be used in the industry to track the product from farm to table, as well as to certify the quality for certain types of meat.
The experts say that although this system has been used previously in other sectors, such as identifying the flow of people in cities, this is the first time that artificial intelligence has been applied as a method of lamb traceability.
To check the validity of artificial intelligence, the experts identified each piece of meat based on three parameters using physical, chemical and sensory analysis. First, the compounds it contains, such as proteins or fatty acids, among others. Second, the physical part, which includes the firmness of the meat, its water retention capacity and its color and finally they carried out a test with trained panelists who helped evaluate and analyze the sensory characteristics of the food, such as its flavor, aroma and texture.
