INTERPORC has participated in the culinary event ‘An Autumn with a View to 2024’, held at the Hotel Índigo in Madrid, where it has shown the benefits of pork and pork products and how they contribute to maintaining a healthy life in all age groups. The objective was to present gourmet dishes inspired by the flavours of the autumn season that is now beginning and that highlight the tradition of Spanish gastronomy, its innovation and the excellence of its food. In this context, INTERPORC has selected a recipe for the renowned chef Nicolás Cudero to prepare: ‘Pork shoulder marinated with paprika from La Vera’.
During its preparation, the nutritional and biological importance of white-coated pork in general, and of ham and shoulder in particular, has been highlighted. More specifically, its benefits as a source of high biological value proteins, essential amino acids and B vitamins, especially vitamin B12, which is key to the development of red blood cells and the brain, have been highlighted.
Its monounsaturated fatty acids, such as oleic acid, favour the cardiovascular system, while the high iron and zinc content contributes to improving immune function and reducing fatigue. Pork is a particularly recommended food for children, women of childbearing age, athletes and the elderly due to its nutritional properties.
Daniel de Miguel, deputy director of INTERPORC, has indicated that “the qualities of ham have made it one of our culinary emblems throughout the world”. Regarding the presa, he has highlighted that “it is a very versatile and delicious cut with a fat infiltration very rich in oleic acid that fits perfectly into a healthy diet”.
For this reason, he added, “it has everything to be part of the recommended consumption of between three and four weekly servings of 100 to 125 grams each, as indicated by doctors and nutrition experts.”
