The El Gusto es Nuestro Cooking School hosted the fifth edition of the “Best Paquito in Madrid” competition, sponsored by INTEROVIC, to recognize excellence in the preparation of the iconic lamb sandwich: El Paquito.
The jury, composed of renowned chefs, food journalists, and industry representatives, chose Terzio Bar’s Paquito as the best of this edition. His proposal, prepared by chef Saúl Sanz, reinterpreted traditional porchetta with a flavored lamb “corchetta,” roasted onion, and piparra mayonnaise, presented on crispy crystal bread. A tribute to the sandwich as a quality gastronomic creation.
The finalists were Marzeah, with a lamb meatball sandwich with red curry, feta cheese, and shallot chili; and Charnela, with a “smashed burger” version of spiced lamb, cold salad, and roasted sweet potato.
This contest is part of the Ruta del Paquito, an INTEROVIC initiative to promote the consumption of Spanish lamb, especially among young people. In this edition, more than 200 establishments throughout Spain are offering their own version of the Paquito until June 30th. This year, regional semifinals are also being added, culminating in the fall with the grand national final.
The Paquito, a sandwich with its own name, continues to win over palates and demonstrate the versatility, sustainability, and flavor of locally sourced lamb.
