El Paquito, the lamb sandwich with its own name, lands in Seville and Zamora

We are in luck. This June, the Ruta del Paquito, an INTEROVIC initiative, lands for the first time in Seville and for the second time in Zamora, within the European program “Suckling lamb, lamb and kid meat. Tasty and Sustainable, choose the European origin”, which aims to promote the consumption of lamb, especially among the youngest public, and show the versatility of this meat, exceptionally tender and tasty.

 

 

During this month and until June 23, the date of the end of the festival coinciding with the celebration of the Day of the Lamb, nearly one hundred establishments in Seville and 15 in Zamora will offer their particular version of this sandwich.

The only requirements: that it can be eaten with your hands and that its main ingredient is leg of lamb fillet, a particularly tender, juicy, versatile and easy-to-prepare piece that is part of the new cuts that INTEROVIC proposes to enhance the culinary uses of The lamb’s meat.

Some of the main addresses are: in Zamora Plaza Mayor Brewery, Universal, La Salita, Marlott, Cachito Café Bar, Pata Negra Restaurant, Marbella by Sonia, Benito & Co Gastrobar, Taberna Urbana Comodín (…).

An affordable, fun and sustainable option

This INTEROVIC initiative is part of the European program “Suckling lamb, lamb and kid meat. Tasty and Sustainable, choose European origin” and aims to rejuvenate and reactivate lamb consumption through a fresh and informal format, affordable for all audiences and, above all, sustainable. As Raúl Muñiz, president of INTEROVIC, assures, “Paquito is not only a fun and delicious consumption option but also a commitment to the sustainability of the territory and a way of supporting the figure of the shepherd who maintains the countryside and gives life to our towns”.

And it is that, of an extraordinary quality and produced in extensive livestock, lamb meat has a substantial importance for the rural environment, both from an ecological and social point of view. On the one hand, grazing and transhumance, practices with more than 3,000 years of tradition in our country, promote biodiversity, contribute to carbon sequestration, favor pollination and help prevent fires thanks to the consumption of grass by part of the cattle On the other hand, sheep and goat grazing is concentrated mainly in the so-called ‘Empty Spain’, in rural areas, which is why it contributes to retaining the population. Not surprisingly, Spain has the largest network of livestock routes in the world, with more than 25,000 kilometres, and it is estimated that the nearly 150,000 sheep and goat farms that currently exist employ more than 250,000 families.
