Catalonia’s best Paquitos will bring creative lamb dishes to Gastronomic Forum Barcelona

INTEROVIC will participate in Gastronomic Forum Barcelona from 2 to 4 November with a programme of live cooking, tastings and lamb butchery demonstrations. The winners of the last two editions of the Best Paquito in Catalonia competition will present their creations at the interprofessional organisation’s stand.

Lamb will take centre stage at the upcoming Gastronomic Forum Barcelona, where INTEROVIC will showcase its possibilities in contemporary cuisine through recipes, tastings and demonstrations for professionals and visitors attending the event.

The Sheep and Goat Meat Interprofessional Organisation will be present in Hall 1, level 0, aisle B, stand 80, with a space dedicated to highlighting the product’s versatility and the work of farmers and professionals throughout the meat supply chain.

Two award-winning Paquitos, two ways to enjoy lamb

One of the highlights will be the participation of the establishments that won the last two editions of the Best Paquito in Catalonia competition, which will prepare their sandwiches for visitors.

On Monday 2 November, Contracorrent, winner of the 2026 edition, will present its Iris Paquito. The creation is inspired by a traditional Sicilian bun and combines a suckling lamb stew with a chopped mixture of anchovy, parsley and garlic.

On Tuesday 3 November, it will be the turn of Reversible, the 2025 winner. Its recipe features slow-cooked lamb shoulder, smoke-infused oil, smoked butter, rosemary and thyme. The sandwich is completed with a hanging tomato and craft beer chutney, as well as Prat artichoke mayonnaise with rosemary.

Each establishment will serve its creation in two sessions, at 12:30 p.m. and 2:00 p.m. on its respective day.

Live cooking and butchery demonstrations

Throughout the three-day event, chef Antonio González, head of R&D at INTEROVIC, will lead the cooking activities at the stand. The dishes planned include lamb Russian salad, sheep meat tartare and a different version of El Paquito each day.

The programme will also include an activity dedicated to learning more about the product. Barcelona master butcher Yolanda Casternado will butcher a lamb carcass in front of visitors each day. The resulting cuts will be displayed in the stand’s showcase to introduce cuts and uses beyond the traditional ones.

Through its participation, INTEROVIC aims to introduce lamb to new audiences and show how it can be incorporated into formats and recipes adapted to current consumption habits. The initiative forms part of its European campaign “Celebrate Everyday Moments with Lamb”, which also highlights livestock farming and its connection to rural areas.
